Road trip eats...

So Graham and I recently made the loooooong trip from Arkansas to North Carolina. Twelve hours; which means three meals on the road.

Traveling makes healthy eating harder, but it isn't impossible. So many fast food places offer healthier options these days, and I've found that getting out of the car and going in someplace to eat makes a huge difference in stress levels, moods, etc.

Breakfast: Chick-fil-A Multigrain oatmeal with toppings.

Lunch was an unpictured veggie sub (... and a cookie) from Subway.

Dinner was AMAZING. We stopped at this chain place in Asheville called Zoe's Kitchen. It's kind of a Greek version of Noodles & Co. or one of those type places, but it was amazing. I had veggie kabobs with a Greek side salad and white beans, and it was absolutely amazing. We also started with an appetizer of (not so healthy) hummus and warm pita bread. YUM. 


This was fantastic! The beans were awesome, and the mushrooms on the kabobs tasted like steak. SO good.

Definitely not healthy, but we splurged and had a cupcake from Gigi's as we drove through Nashville. Their cupcakes are fantastic, but the frosting is INSANE. We decided to split one. We had the Miss Princess, and it was so, SO good. Graham's an excellent husband and says my frosting is better =) But it was very, very good and the perfect treat after our Subway lunch.
